The F1 Mexican Grand Prix viewing party was a blast! The race kept us on edge as the drivers struggled to keep their cars on the track, making for some exciting moments. We had a feast of delicious Mexican food and enjoyed every bite. We started with a bracing Margarita followed by crispy black bean and sweet potato enchiladas, a Mexican street corn salad, mango salsa, guacamole and a stunning Chocoflan cake for dessert. Cora, my beautiful Golden Pei, couldn’t resist the camera. We even had time to test the wingspan=height theory (generally true). All in all, it was a great race and great time with family and set us up for an exciting final four races.
RECIPES
•Crispy Black Bean Sweet Potato Enchiladas, crunchy, saucy, spicy, and cheesy
•Mexican Street Corn Salad (Esquites), fresh, bright, lightly creamy and spicy
•Chocoflan, beautiful contrasting layers of chocolate cake and flan
Mango Salsa
Ingredients:
1 large mango, finely chopped
1 medium red bell pepper, finely chopped
½ medium uncooked red onion, finely chopped
½ medium jalapeño pepper, seeded, minced
1 Tbsp cilantro, fresh, chopped
1 ½ Tbsp fresh lime juice
1/8 tsp black pepper
Salt to taste
Combine all ingredients in a medium bowl.
Notes: Chopped celery leaves can be substituted for cilantro (if you are as allergic as I am). Omit the jalapeño if you do not want the salsa to be spicy. This is better if you prepare an hour or two before serving.
