Miami Grand Prix 2025

The Miami Grand Prix was like a trip down memory lane. It’s been years, but the food and aromas were so familiar. We started the celebration with some Sex on the Beach, in the form of a cocktail, accompanied by a Cuban Charcuterie Tray. We then feasted on Pork Shoulder Carnitas, Congri (Cuban Rice and Black Beans), a Citrusy Cabbage Slaw, Garlic Lime Crema, and chips with Mango Salsa. Key Lime Pie Dessert Shooters were the perfect finish to our South Florida meal.

Mango Salsa
Ingredients:
1 large mango, finely chopped
1 medium red bell pepper, finely chopped
½ medium uncooked red onion, finely chopped
½ medium jalapeño pepper, seeded, minced
1 Tbsp cilantro, fresh, chopped
1 ½ Tbsp fresh lime juice
1/8 tsp black pepper
Salt to taste
Combine all ingredients in a medium bowl.
Notes: Chopped celery leaves can be substituted for cilantro (if you are as allergic as I am). Omit the jalapeño if you do not want the salsa to be spicy.  This is better if you prepare an hour or two before serving.
